"Our approach to cheese is a simple one and it's the same approach used when it comes to selecting wine for our store. We taste before we select and try to get to know the producer and importer. We also chose from the beginning, to cut all of our cheeses "fresh to order." This means that we personally and professionally cut and wrap the cheese fresh from the wheel, which gives you a longer shelf life at home and allows you to purchase the exact amount that you desire. And of course we offer free samples of our cheeses so that you may see for yourself, the character of each cheese.
